We all recognize that food waste at the Winter Fancy Food Show has a large environmental impact and the Fancy Food Show organizers along with the city of San Francisco and the Moscone Convention Center are committed to continuous improvement in the area of food and food service ware waste diversion from landfill.

Here’s some useful information about the city of San Francisco’s Food Service and Packaging Waste Reduction Ordinance and some simple guidelines on how to be in compliance.

Accepted compostable food service ware products: 

  • Paper or other plant fiber, such as from sugarcane, rice, or bamboo.
  • Polyethylene film coating on paper is currently accepted, but no foam coating.
  • Corn, soy, potato, or other plant starch based bio-plastics, such as “PLA” clear plastic that are labeled “compostable” and meet compostability standards (ASTM D6400).
  • Paper or other plant fiber, such as from sugarcane, rice, or bamboo.

What’s not accepted?                            

Bags and food service ware labeled:

“green”, “environmentally friendly,” “biodegradable,” “degradable,” “will decompose,” “photodegradable,” “made from corn starch,” or other unsubstantiated claims are not accepted.

Step Two: Create clearly-marked Compost bin(s) in your booth for compostable sampling spoons, paper soufflé cups, wooden toothpicks and a food waste from sampling and food demos. Use these handy printable Compost labelsReminder: Be sure to line your Compost bin with a compostable bag. We love using green BioBags as our compost bin liners at trade shows and farmers’ markets.

Step Three: Deposit ALL your demo ware and sampling utensils, soufflé cups, wooden toothpicks, and food waste in your Compost bin(s). No separating or costly sorting needed. Keep your booth at least 2 ft back in your booth so show attendees don’t accidently toss in non-compostable items such as plastic spoons, wrappers, etc.

Step Four: Dispose of your booth’s Compost bin contents at one of designated three-stream waste stations within the Moscone Convention Center. Remind any event cleaning staff that the bin contents are all 100% compostable!
